Summer Quinoa + Greens Bowl

Since moving into my new apartment two weeks ago, I’ve been cooking up a storm! I have so many recipes I want to share with you all. Lately rather than following a recipe I’ve been going off of what flavors sound good together and also how I can incorporate more veggies into my diet. In college, it is so easy to go for quick takeout or pasta since they’re easy to “cheap” to make. I’ve found ways to make my food quick to make, affordable to buy- all while being healthy and delicious!


Ingredients:

  • 1/2 Cup Quinoa

  • 2 Hands of Fresh Spinach

  • 1 Cup Broccoli, chopped

  • 1 small Shallot, chopped

  • 1 Tbsp Olive Oil

  • 1/2 Lemon, juiced

  • Cucumber

  • 1 tsp Dill or Fresh dill

  • Feta (Optional: For topping)

  • Salt for seasoning

This makes about 2 servings! Double it up for a great meal prep recipe- hot or cold!


Instructions:

  • Start by boiling a cup of water. Rinse your quinoa and then cook for 15 minutes.

  • While quinoa cooks, heat up your olive oil in a skillet. Add your shallot and sauté for a minute. Then add the broccoli. Once the broccoli is slightly steamed, add the spinach and stir in until its wilted and steamed through.

  • Add the cooked quinoa to the skillet with your sautéd veggies. Add lemon juice and dill, then stir everything together.

  • Serve into a bowl and top with chopped cucumber, extra dill, and a pinch of salt. I also added feta to mine, but that’s a personal preference!
